Zucchini pasta

Ingredients

  • Fresh zucchini
  • Red onion
  • Semi-dried cherry tomatoes
  • Garlic
  • Granoliva Pesto Verde Spread
  • Pine nuts
  • Olive oil
  • Pepper and salt
  • Feta cheese

Preparation method

  1. Wash the zucchini and make spaghetti-like strands using a spiralizer. Let them drain in a colander to remove excess moisture
  2. Finely chop the garlic and slice the red onion into thin strips. Sauté both in a bit of olive oil
  3. Add the cherry tomatoes and briefly cook until they begin to soften
  4. Add the zucchini pasta and stir-fry briefly until just tender
  5. Remove from heat and mix in a few tablespoons of pesto
  6. Toast the pine nuts in a dry pan until golden brown
  7. Crumble some feta over the dish and finish with the toasted pine nuts and a few extra dollops of pesto
