Preparation method
- Wash the zucchini and make spaghetti-like strands using a spiralizer. Let them drain in a colander to remove excess moisture
- Finely chop the garlic and slice the red onion into thin strips. Sauté both in a bit of olive oil
- Add the cherry tomatoes and briefly cook until they begin to soften
- Add the zucchini pasta and stir-fry briefly until just tender
- Remove from heat and mix in a few tablespoons of pesto
- Toast the pine nuts in a dry pan until golden brown
- Crumble some feta over the dish and finish with the toasted pine nuts and a few extra dollops of pesto
