Ingredients

  • 200g Granoliva Grilled Pepper Mix
  • 125g Granoliva Black Olive Tapenade
  • 200g Granoliva Grilled Eggplant
  • 125g Granoliva Pesto verde spread
  • 200g Provolone cheese, thinly sliced
  • 1 Focaccia
  • 100g Tomato, thinly sliced
  • 80g Fennel
  • 50g Arugula

Preparation

  • Preheat the oven to 180°C.
  • Shave the fennel and place it in cold water.
  • Bake the bread for 8 to 10 minutes.
  • Slice the bread in half using a serrated knife.
  • Layer the toppings in the following order:
    • Pesto verde spread
    • Provolone
    • Tomato
    • Grilled peppers
    • Grilled eggplant
    • Fennel
    • Arugula
  • Spread the black olive tapenade on the top half of the bread.
  • It’s important to cover the entire surface of the bread with each topping to ensure every bite contains all the flavours.

Tip: You can prepare the whole sandwich in advance. Just slice a wedge before serving and you’re done.
