Mufuletta Sandwich
Ingredients

200g Granoliva Grilled Pepper Mix

125g Granoliva Black Olive Tapenade

200g Granoliva Grilled Eggplant

125g Granoliva Pesto verde spread

200g Provolone cheese, thinly sliced

1 Focaccia

100g Tomato, thinly sliced

80g Fennel
-
50g Arugula
Preparation
- Preheat the oven to 180°C.
- Shave the fennel and place it in cold water.
- Bake the bread for 8 to 10 minutes.
- Slice the bread in half using a serrated knife.
- Layer the toppings in the following order:
- Pesto verde spread
- Provolone
- Tomato
- Grilled peppers
- Grilled eggplant
- Fennel
- Arugula
- Spread the black olive tapenade on the top half of the bread.
- It’s important to cover the entire surface of the bread with each topping to ensure every bite contains all the flavours.
Tip: You can prepare the whole sandwich in advance. Just slice a wedge before serving and you’re done.
