Sabich Sandwich
Ingredients

50g Granoliva Houmous original

100g Grilled eggplant

30g Tahini dressing: 80 g Tahini paste, juice of ½ lemon, 100 g yoghurt, 1 clove garlic, finely chopped

50g Tomato-cucumber salad: 100 g cherry tomatoes (sliced), ¼ cucumber (diced), 20 g flat-leaf parsley (roughly chopped), juice of 1 lemon, 40 ml extra virgin olive oil

1/2 Hard-boiled egg

1 Pita bread

20g Mango chutney
-
2 Pickles
-
3g Parsley
-
3g Mint
Preparation
- Mix the ingredients for the tahini sauce.
- Combine all ingredients for the tomato-cucumber salad in a mixing bowl.
- Preheat the oven to 180°C.
- Warm the pita bread in the oven for 3 to 4 minutes.
- Spread the houmous over the pita, not all the way to the edge.
- Arrange the eggplant slices on top of the houmous. It can look a bit rustic.
- Spoon the tomato-cucumber salad over the aubergine.
- Slice the pickles and scatter them over the sandwich.
- Cut the hard-boiled egg into 3 wedges and place them randomly on top.
- Finish with mango chutney, tahini sauce, and chopped mint and parsley.
Ready to serve!
