Ingredients

  • 50g Granoliva Houmous original
  • 100g Grilled eggplant
  • 30g Tahini dressing: 80 g Tahini paste, juice of ½ lemon, 100 g yoghurt, 1 clove garlic, finely chopped
  • 50g Tomato-cucumber salad: 100 g cherry tomatoes (sliced), ¼ cucumber (diced), 20 g flat-leaf parsley (roughly chopped), juice of 1 lemon, 40 ml extra virgin olive oil
  • 1/2 Hard-boiled egg
  • 1 Pita bread
  • 20g Mango chutney
  • 2 Pickles
  • 3g Parsley
  • 3g Mint

Preparation

  • Mix the ingredients for the tahini sauce.
  • Combine all ingredients for the tomato-cucumber salad in a mixing bowl.
  • Preheat the oven to 180°C.
  • Warm the pita bread in the oven for 3 to 4 minutes.
  • Spread the houmous over the pita, not all the way to the edge.
  • Arrange the eggplant slices on top of the houmous. It can look a bit rustic.
  • Spoon the tomato-cucumber salad over the aubergine.
  • Slice the pickles and scatter them over the sandwich.
  • Cut the hard-boiled egg into 3 wedges and place them randomly on top.
  • Finish with mango chutney, tahini sauce, and chopped mint and parsley.

    Ready to serve!
