The Sabich sandwich is an Iraqi-Israeli dish. Sabich or sabih is Hebrew for pita bread filled with fried aubergine, hard-boiled eggs, salad, parsley, and tahini sauce. You can prepare several sandwiches in advance to serve them quickly.
